Last Night

Was the perfect night to make chicken noodle soup for dinner. Here is the recipe, slightly modified from Amanda's version.

Hearty Chicken Noodle Soup

4 cups chicken broth
2 cups chopped carrots
2 cups chopped celery (optional)
1 cup chopped onion
3 cans cream of chicken soup
2 cups cooked chicken
4 cups cooked noodles
1 cup frozen peas (depending on your husband. . . )
Salt and pepper to taste

Saute onions until slightly caramelized. Add carrots, celery, and chicken broth and simmer until vegetables are tender. Add cream of chicken soup, chicken, noodles, and frozen peas. Add salt and pepper to taste. Makes about 2 1/2 quarts or 10 one-cup servings.

The celery is optional because this is a good stand-by meal, and I don't always have celery in my fridge. If you have a husband like Steve, who will avoid the peas in his soup like they are some disgusting, moldy growth, then you might as well just skip the peas. Otherwise, you will probably end up with three children, who actually like peas, all whining about the peas in their soup too.

Last night was also the perfect night to go rock climbing at Ogden's new gym, The Front.

Mostly because our friends came with us and drastically reduced the child to adult ratio. (Thanks!)

Rachel and Lucy are good little rock climbers. Adam is pretty good little belay assistant. (It kept him from running around.) Steve was the only one who didn't get up on the wall. Maybe he was afraid J.D. would drop him in retaliation.

I am sore from free climbing the hanging rope on the other side of the gym. I don't think I've done that since what. . . sixth grade? But yes, folks, I made it to the top.

yum, but I'm curious - why go to the trouble to cook the noodles before hand and then add them? Why not just throw them in the soup and let them cook. Faster, easier.
